Baked Apple Pancake
Ingredients:

1 large Granny Smith apple

3 large eggs, room temperature

2 tbsp butter

½ cup whole milk
-
¼ cup brown sugar
-
½ cup flour
-
¼ tsp cinnamon
-
¼ tsp vanilla extract
Directions:
Preheat oven to 400 degrees.
Peel, core, and slice the apple. Melt the butter in an 8 inch ovenproof skillet over medium heat. Spread the apple slices in the pan and cook until fork tender. Sprinkle with brown sugar and cinnamon, and cook until the sugar begins to melt. Remove from heat and stir lightly to coat the apples with sugar.
While the apples are cooking, whisk together the eggs, milk, flour, and vanilla in a mixing bowl until smooth. Pour the mixture over the cooked apples in the skillet. Bake for 20 minutes or until pancake puffs up and turns golden brown around the edges. Slice the pancake in half, and serve with syrup and your choice of breakfast meat.
Note: This recipe is for 2 servings. For 4 servings, use a 10 inch skillet, double the ingredients, and increase the cooking time to about 25 minutes.
